Taco Chicken Recipe

Do you like tacos? Chicken? Cheese? (Who doesn't!?)...then you should LOVE this recipe! This is our go-to "having company over" dish. (Except for one couple who seems to always get frozen lasagna...you know who you are!) We adapted it from this recipe from Kraft Foods:

Recipe:

3-4 Boneless, skinless chicken breasts
1 pack taco seasoning
1-2 ripe tomatoes, diced (or 1 jar of salsa)
2 cups fiesta cheese
brown rice (optional)

Preheat oven to 400 degrees. Tear apart pieces of aluminum foil that are big enough to wrap loosely around each chicken breast. Lay out each chicken breast on its own piece of foil. Sprinkle the taco seasoning evenly on all pieces of chicken. Next, spoon on heaping tablespoons of the tomatoes on each piece of chicken. (Use all the tomatoes. It adds to the moistness and flavor of the chicken.) Sprinkle all pieces with cheese. (More or less, according to preference). Loosely fold the aluminum foil over each piece of chicken. Place on baking sheet and cook for 40-45 minutes, or until chicken is cooked through. Carefully unwrap each piece and serve.

I like to serve ours over brown rice and sprinkle extra cheese on top! Our preference is using fresh tomatoes, instead of salsa. Both are good, though!
